Die Geschichte unseres Unternehmens beginnt im Jahr 1893 als der Ururgroßvater Giovanni Fabbri von Cintola nach Strada in Chianti zog, einige Kilometer näher nach Florenz, und das alte Wissen seiner Eltern, Bauern, Müller und Pastahersteller, mit sich nahm. Seit 5 Generationen vom Vater auf den Sohn 5, reicht die Familie Fabbri ihr Wissen und ihre Geheimnisse der Fertigung weiter.

Neben der Tätigkeit als Pastahersteller hat jeder Inhaber das dingliche, vom Vater übernommene Erbe bewahrt, sodass eine reichhaltige Sammlung alter Gegenstände entstanden ist. Es war Giovanni Fabbri, stolzer Vertreter der vierten Generation, der die Entscheidung traf, ein Museum einzurichten, das heute über 400 Stücke, außer einer großen Anzahl von Büchern und Dokumenten vergangener Zeiten, vereint.

Giovanni Fabbri: the founder

Giovanni Fabbri moves from Cintoia to Strada in Chianti and buys a land in Piazza (“square”) Landi, thanks to his wife’s dowry: he establishes his pasta factory together with a mill, a bakery and a food outlet.

The electrical pasta factory

The electrical pasta factory

The firm goes from the marble wheel operated by horses to the electrical pasta factory, called then “hygienic work”, as you can read on an invoice dating from this year (see Fabbri’s Museum leaflet).

Livio Fabbri, 2nd generation

Livio Fabbri, 2nd generation

When Giovanni died, his son Livio inherits the pasta factory while his brother Lionello, gets the bakery and the food outlet.

The Reconstruction After The War

The Reconstruction After The War

At the end of the war, the mill, the bakery and all machinery are mined whereas a part of the ceiling fell down: only the walls remain.

Renzo Fabbri, 3nd Generation

Renzo Fabbri, 3nd Generation

In charge of the company along with his father, Renzo accelerates the business development with the acquisition of the first continuous press “Cantini”, a model of which, dating from 1958, is still today the heart of our production.

The New Pastificio

The Pasta Factory moves to the current headquarter at no. 18 Piazza Landi, where there used to be the stables.

Giovanni Fabbri, 4th Generation

At 16 years old, Giovanni, great-grandson and namesake of the factory’s founder, starts to work for the family business next to his father.

Lisa e Marco, 5a generazione

Giovanni’s children, Lisa and Marco, run the company along with their father, as it always has been within the family for more than a hundred years.
