Grandine soda with clams
Ingredients
For 4 people:
- 350g Grandine Soda
- 2 cloves of garlic
- 1kg clams
- 100ml white wine
- 300g tomato sauce
- Zest of half a lemon
- Parsley
- Marjoram
- Thyme
- Extra virgin olive oil
- Pepper
- Salt
Preparation
1. Sauté the minced garlic in extra virgin olive oil. Add the thoroughly cleaned clams and cook over high heat until they open. Then deglaze with white wine. Once the clams are opened, remove them from the pot and set them aside.
2. Strain the clam cooking water and set it aside as well.
3. In the same pot, toast the Grandine Soda for a few seconds.
4. Pour in the clam cooking water and tomato sauce. Season with salt and spices. If needed, add broth or hot water to complete the cooking, stirring continuously as if making a risotto.
5. At the end of cooking, add the clams (preferably shelled) and the aromatic herbs. Plate the Grandine Soda and garnish with clams, grated lemon zest, and a drizzle of oil (flavored with garlic and aromatic herbs).
