"It is a spaghetti with a diameter of 3 millimeters and a length of 260 millimeters, therefore particularly thick, but also equally rough and porous to better hold sauces.
It is produced in two versions: one made with semolina from ancient cultivars and the other with pure durum wheat semolina, always using bronze dies.
The product is dried at no more than 38°C for about 5-6 days, plus an additional 24 hours for stabilization.
The drying process is always manually monitored.
The raw material is of national origin and often produced by two companies with which Pastificio Fabbri works preferentially.
One is the Renzo Marinai company, which produces Cappelli wheat in Panzano in Chianti at an altitude of 550 meters, and the other is the Montepaldi company, affiliated with the University of Florence, with whom the Fabbri family has long carried out numerous research projects in the cereal sector.
Blends are predominantly used, although there are also single-variety products. In any case, the pasta factory uses grains that, after harvesting and until October of the harvest year, are allowed to 'rest' and are milled at a lower ambient temperature, as was done in the past. The wheat needs to stabilize before being used.
This product is available both in Italy and abroad, where Pastificio Fabbri is increasingly present. For example, it can easily be found in high-end Italian restaurants in the United States, Belgium, Germany, as well as in Russia, Australia, Canada, Israel, and Japan.
As for the domestic market, Fabbri Spaghettone can be enjoyed in fine dining restaurants and gourmet shops.
In particular, in those establishments that base their offering on traditional and highly selected products. This excellent pasta can also be purchased in specialty stores."
