"Pastificio Fabbri is the official supplier of the Luna Rossa team and a partner of Yamaha Moto GP. The decision to source from the company in Strada in Chianti (Fi) is due to the high quality of the products. 'It’s not just a matter of taste, but of nutrition,' explains Umberto Panerai, the athletic trainer and nutritionist, on the Luna Rossa website. 'Pasta is a fundamental part of an athlete’s diet, but it’s hard to find pasta that maintains its properties and nutritional power until it reaches the plate.' Fabbri pasta clearly has these qualities. For example, it’s rich in starch, so much so that 'the water, at the end of cooking, is cloudier,' confirms Maurizio Sarigu, chef for the Luna Rossa team, 'while with other pastas, it remains almost clear.' Additionally, because of its strong flavor, Fabbri pasta 'doesn’t need complex or fatty sauces.' The sailing team’s three favorite pasta shapes are Stracci, which Sarigu typically prepares with pesto, Spaghettoni with tomato and basil or with garlic, oil, and chili pepper, and Millerighe with raw extra virgin olive oil, parmesan, and black pepper."
