It is a great satisfaction for the historic pasta factory, whose origins date back to 1893.

'The success of our pasta is due to a secret passed down through generations: the natural drying process with the "Fabbri Method," a natural drying process where temperatures never exceed 38°C at any stage of production. This results in drying times ranging from 3 to 6 days. This method allows us to maintain gluten and starches in their natural state, which facilitates digestibility. This characteristic has been key in establishing many collaborations with athletes and nutritionists. The experience accumulated over five generations has made Pastificio Fabbri an outstanding player in the pasta-making world. We are also capable of working with ancient grains that are almost extinct; to do so, we collaborate with small producers and millers to create products suitable for those who are gluten intolerant.”
