Medium Paccheri with squid sauce and mint sauce

Ingredients:
For 4 servings:
• 350g Mezzi Paccheri
• 2kg squid
• 100g mint
• 6 garlic cloves
• 1 onion
• 2kg tomato passata
• frying oil
• extra virgin olive oil
• vinegar
• salt and pepper to taste
Preparation:
1. Wash the squid thoroughly, clean them, and cut them into thin strips.
2.Finely chop the onion and garlic, then sauté them in a large pan with a drizzle of extra virgin olive oil.
3. Add most of the sliced squid and let them cook for a few minutes. Pour in the tomato passata, season with salt and pepper, and add some fresh mint leaves. Cook over low heat.
4. In another pan, heat the frying oil. Bread the remaining squid and fry them until golden brown: they will be used to garnish the dish when serving.
5. Bring a pot of water to a boil and cook the Mezzi Paccheri. Drain them about 1 minute before the suggested cooking time and transfer them directly into the pan with the sauce, stirring well to combine.
6. Wash some fresh mint leaves, place them in a jug with extra virgin olive oil and a spoonful of vinegar. Blend until smooth, then season with salt.
7. Serve the Mezzi Paccheri with the squid sauce, garnish with the fried squid, and finish with a few drops of mint sauce. Enjoy!
