"A story that begins in the last decade of the 19th century when great-great-grandfather Giovanni Fabbri purchased a plot of land in the square of Strada in Chianti and started a business in milling, pasta production, and the sale of food products. During World War II, many machines, from the mill to the star-shaped bread oven, from the kneading machines to the vertical pasta press, were mined and blown up to deprive the town of much of its sustenance. Fortunately, part of the building and machinery were saved, allowing the pasta factory to remain in operation. Today, the company, which employs about ten people, is run by two generations: the fourth generation, represented by Giovanni, and the fifth, by Marco and Lisa.

'It was my children's choice,' says Giovanni, 'to stay in the family business. They studied and then decided. Marco started by helping me during a period when I had some health problems, but then he fell in love with the work. And today, we are all here together.'
