For over thirty years, our commitment to healthy and sustainable food, rooted in tradition and respect for the land, has been at the heart of our collaboration with Slow Food.
Through our monthly participation in the Mercati della Terra of Fiesole and Mercatale in Val di Pesa, we promote a short, transparent, and high-quality supply chain, fully aligned with the values championed by Slow Food. These principles are the compass that guides every stage of our work, from the selection of wheat to the artisanal production of pasta.
Short supply chain and quality: a shared goal
At Pastificio Fabbri, every stage of production is carefully overseen, with particular attention to slow, low-temperature drying (never above 38 °C), respecting nature’s own rhythms.
This approach preserves the nutritional richness and authentic flavor of pasta, and above all reflects an idea of food with a soul: good for those who eat it, fair for those who produce and buy it, and clean for the planet.
Building a network with local restaurants and shops not only allows us to promote our product alongside those who share our values, but also to actively support the local economy.
