Spelt Spaghetti with Wild Boar, Figs, and Black Garlic

 

Ingredients (for 2 people):

  • 160g of 110% Dicocco Spelt Spaghetti
  • 2 thick slices of wild boar salami
  • 4 figs
  • 2 tablespoons of black garlic paste
  • Olive oil, salt, and pepper

Method:
1️⃣ Dice the wild boar salami and cook it in a non-stick pan until crispy.
2️⃣ Set the salami aside and, using the fat released, sauté the figs (previously quartered) for two minutes.
3️⃣ In the same pan, melt the black garlic paste with a drizzle of olive oil and a bit of pasta cooking water. When the pasta is almost ready, finish cooking it in the pan with a sprinkle of pepper.
4️⃣ Plate the dish by adding the crispy salami and figs. Enjoy your meal!



Stracci Pasta with Potatoes, Saffron, and Pine Nuts

 

Ingredients (for 2 people):

  • 160g of Organic Semolina Stracci Toscani Pasta
  • 1 potato
  • Pine nuts
  • Ricotta cheese
  • Saffron
  • Nutmeg
  • Mint
  • Chili pepper
  • Olive oil and salt

Method:
1️⃣ Boil the potato in lightly salted water.
2️⃣ Once soft, blend it with a bit of the cooking water, add the saffron, a drizzle of olive oil, and adjust the salt.
3️⃣ Soften the ricotta with some of the same cooking water, add nutmeg, and mix until it becomes a smooth cream.
4️⃣ Toast the pine nuts in a non-stick pan, then set them aside.
5️⃣ In the same pan, heat a drizzle of olive oil with the chili pepper.
6️⃣ Cook the pasta and finish cooking it in the pan, adding the saffron-infused potato cream.
7️⃣ Plate the dish by adding the ricotta cream, toasted pine nuts, and mint. Enjoy your meal!


Reginelle with Pomegranate Juice, Gorgonzola Fondue, and Crispy Rigatino


Ingredients (for 2 people):

  • 160g of organic semolina Reginelle Toscane pasta
  • 1 pomegranate
  • 100g gorgonzola cheese
  • 8 slices of pancetta (Tuscan cured pork belly)
  • Milk

Method:
1️⃣ Peel the pomegranate, extract all the seeds, and blend them. Then strain the juice.
2️⃣ In a non-stick pan, cook the pancetta until crispy, then set it aside.
3️⃣ Heat the milk and melt the Gorgonzola in it.
4️⃣ Cook the pasta and finish cooking it in the pan with the pomegranate juice.
5️⃣ Plate the dish by adding the Gorgonzola fondue and crispy pancetta. Enjoy your meal!
