Valentine's day in the kitchen: 3 artisan pasta recipes to try

Do you want to make your Valentine’s dinner special? Prepare a dish of artisanal pasta, perfect for a romantic and refined atmosphere. In this article, you’ll find 3 simple and delicious recipes to surprise your loved one with the authentic taste of Italian pasta.
Spelt Spaghetti with Wild Boar, Figs, and Black Garlic
Ingredients (for 2 people):
- 160 g 100% Dicocco spelt spaghetti
- 2 thick slices of wild boar salami
- 4 figs
- 2 tablespoons black garlic paste
- Extra virgin olive oil, salt, and pepper to taste
Method:
1️⃣ Dice the salami and sauté it in a non-stick pan until crispy.
2️⃣ Set the salami aside and, in the fat it released, sauté the figs (cut into quarters) for two minutes. Then set them aside.
3️⃣ In the same pan, melt the black garlic with a drizzle of olive oil and a little pasta cooking water. When the pasta is almost ready, finish cooking it in the pan with the black garlic, adding a sprinkle of pepper and adjusting the salt.
4️⃣ Plate and add the salami and figs. Enjoy!
Stracci Toscani Pasta with Potatoes, Saffron, and Pine Nuts
Ingredients (for 2 people):
- 160 g Organic Semolina Stracci Toscani Pasta
- 1 potato
- 40 g pine nuts
- 100 g ricotta cheese
- 1 sachet saffron
- 1 nutmeg
- A few mint leaves
- Chili pepper, to taste
- Extra virgin olive oil, to taste
- Salt, to taste
Method:
1️⃣ Boil the potato in lightly salted water.
2️⃣ Once soft, blend it with a bit of its cooking water, add the saffron, a drizzle of olive oil, and adjust the salt. Set the potato cream aside.
3️⃣ In another bowl, loosen the ricotta with some of the same cooking water, add freshly grated nutmeg, and mix until smooth and creamy.
4️⃣ In a non-stick pan, toast the pine nuts and then set them aside.
5️⃣ In the same pan, heat a drizzle of olive oil with the chili pepper.
6️⃣ Cook the pasta in salted boiling water and finish cooking it in the pan, adding the potato cream and a little pasta cooking water.
7️⃣ Plate and garnish with the ricotta cream, toasted pine nuts, and mint. Enjoy!
Reginelle with Pomegranate Juice, Gorgonzola Fondue, and Crispy Rigatino

Ingredients (for 2 people):
- 160 g Organic Semolina Reginelle Toscane Pasta
- 1 pomegranate
- 100 g gorgonzola cheese
- 8 slices Tuscan rigatino (pancetta)
- 50 g milk
Method:
1️⃣ Peel the pomegranate, extract all the seeds, and blend them. Then strain the juice through a sieve. Pour the juice into a glass and set aside.
2️⃣ In a non-stick pan, cook the slices of rigatino until crispy, then set them aside.
3️⃣ In a small saucepan, heat the milk, add the gorgonzola, and let it melt.
4️⃣ Cook the pasta in salted boiling water and finish cooking it in a pan together with the pomegranate juice.
5️⃣ Plate and top with the gorgonzola fondue and the crispy rigatino slices. Enjoy!
